These meal prep freezer breakfast burritos taste amazing and are perfect if you are looking for a quick make ahead breakfast that will last the whole week. These burritos are super customizable, so you can make a different flavor combination for each day of the week.

Ingredients for Breakfast Burritos
Before making these meal prep breakfast burritos, make sure you have all the ingredients you need. Some ingredients are optional, so be sure to customize based on your personal preferences.
- Whole wheat flour tortillas: regular flour tortillas also work for this recipe.
- Eggs: this is what makes them breakfast burritos!
- Turkey bacon: you can also use regular bacon, I just prefer a leaner meat.
- Cheddar cheese: or any other cheese you fancy.
- Yellow onion: you can also use white or red onions, I just like the way yellow onions caramelize.
- Black beans: optional, but a great way to add some extra fiber and nutrients.
- Salsa: I used fresh pico de gallo, but any salsa will work.
- Jalapeño: optional, but adds a great kick! I use pickled jalapeños.
How to make Breakfast Burritos
In a large skillet, saute onions over medium heat until browned. Set these aside and use the same pan to cook your turkey bacon. Transfer the bacon to a plate once fully cooked and use the leftover oil in the pan to scramble your eggs. Transfer the eggs to a plate.
Throw the tortillas on the skillet and flip after a minute. This will help warm them up so they are easier to roll into burritos. Transfer the tortillas to a cutting board or flat surface. Add desired ingredients to the tortilla and wrap. I like to layer in this order: eggs, bacon, onion, beans, salsa jalapeños and cheese.
Roll the tortillas into burritos then transfer to the skillet. Place tortillas so the open side is face down. This will help seal the tortillas. Then flip to the other side. This will help melt the cheese a bit. Repeat with all of the burritos.
Once browned on each side, enjoy right away or wrap in parchment paper. Once each burrito is individually wrapped, transfer to a large freezer bag and store in the freezer until ready to eat. Once ready, remove from the freezer, unwrap and heat up in the microwave for 2-3 minutes or until completely defrosted.

Once the meal prep breakfast burritos are made, wrap them up individually in parchment paper. From there, transfer the parchment paper wrapped burritos to a large freezer bag. Seal the bag and store in the freezer.
Once you are ready to eat a burrito, remove one from the bag, unwrap and microwave for 2-3 minutes or until heated through. It’s really as simple as that!
