Microwave Pancake in a Mug Recipe

If you are looking for a quick and easy recipe for mug pancakes, you are in the right place. This is a great recipe if you need to make something quick before work or school or if you are cravings pancakes at 10pm. Whatever if may be, enjoy!

What do you need?

For this recipe, you will of course need a mug (if you couldn’t have guessed from the title), along with a few ingredients you could probably find in your cupboard. 

  • All purpose flour
  • White sugar
  • Baking powder
  • Milk of choice
  • Vanilla extract
  • Vegetable oil or butter

Add-ins to make your mug pancake even better

There are a few things that you can add in to make this recipe even better. I suggest adding in 1-2 tbsp of the add in of choice to avoid it being too overwhelming.

Here are a few of my favorites to add in:

  • Chocolate chips (of course)
  • Blueberries
  • Chopped nuts
  • Caramel sauce
  • Bananas
  • White chocolate chips
  • Cinnamon
  • Matcha powder
  • Cocoa powder

Along with this, I also like adding a little something to the top of the mug pancakes after they are finished. While maple syrup is a great choice, here are some of my other favorites:

  • Berry compote
  • Caramel syrup
  • Chocolate syrup
  • Whipped cream
  • Chopped nuts
  • Caramelized bananas

Can I add protein powder to this recipe?

Yes you can! I would suggest replacing 1-2 tbsp of the all purpose flour with protein powder. If it is flavored protein powder, you may be able to cut back on the amount of sugar in the recipe. 

That being said, the texture will change when you add in the protein powder so proceed with caution. I would start by replacing 1 tbsp of flour with protein powder and see how it turns out. If it looks good, you can replace another tbsp.

Every protein powder is different so results will vary depending on the type, brand and flavor.

Additional tips to make it even better

Finally, here are a few tips to make the recipe even better! First, if you use vegetable oil, use something with a neutral flavor as opposed to a strong flavor like olive oil. I like using avocado oil. 

If you use butter, be sure to melt it before adding it to the batter to avoid clumps. 

Next, be sure to be exact with the measurements. Baking is a science and if one measurement is a little off, the whole recipe is going to be a little off. So be careful and take care in measuring out everything!

  • 3 tbsp All purpose flour
  • 2 tsp White sugar
  • 1/4 tsp Baking powder
  • 2 tbsp Milk of choice
  • 1/2 tsp Vanilla extract
  • 1 tsp Vegetable oil or melted butter


  • Combine all ingredients in a mug.
  • Microwave for 60-90 seconds.
  • Let sit for 1-2 minutes, then enjoy!
