      Ube Rice Krispie Treats

      These ube rice krispies are the best dessert to share with your friends or even bring to a Halloween party. They are chewy with a hint of ube, the perfect crispy treat.

      What is ube?

      Ube is a purple yam, similar to sweet potato, which is often used in Filipino desserts. It has a very distinct, bright purple color on the inside with a brownish-purple outer coating.

      It is not to be confused with taro, which is another kind of starchy root vegetable. Taro is a light purple-beige color on the inside and is less sweet compared with ube. 

      Origins

      Ube is indigenous to the Philippines, meaning it has been a part of Filipino cuisine for centuries. A few recipes that traditionally use ube are listed below.

      • Ube Halaya: Sweet purple yam jam. 
      • Ube Ensaymada: Coiled ube-filled pastry. 
      • Ube Pandesal: Purple bread rolls. 
      • Ube Biko: Ube-infused rice cake. 
      • Ube Hopia: Ube-filled Filipino pastry. 
      • Ube Kalamay: Sticky ube rice cake. 
      • Ube Macapuno Cake: Ube-coconut layered cake.

      Where to buy

      You should be able to find ube at your local Asian grocery store. If you are having no luck, try a Filipino grocery store. If you don’t have one near you, you can always order online from stores like Weee! and Umamimart

      Ingredients for Ube Rice Krispies

      Before making this recipe, make sure you have all the ingredients you need. All the ingredients are listed down below next to the possible alternatives. For the best results, stick to the original ingredients.

      Unsalted butterCoconut oil, vegan butter
      Sweetened condensed milk (optional)
      Marshmallows
      Ube extract

      How to make Ube Rice Krispies

      In a large pot over medium heat, add the butter. Move around until it is completely melted, then add the sweetened condensed milk. Stir to combine.

      Then, add the marshmallows and gently stir until they are almost completely dissolved. Then, add the drops of ube extract and continue to stir until fully dissolved. 

      Remove the large pot from the heat and add the puffed rice cereal to the marshmallow mixture. Gently fold the mixture until well coated.

      Then, add the white chocolate and fold again. 

      Spray a baking dish with cooking spray or lay down a layer of parchment paper. Then, add the rice krispies mixture. Use a spatula to gently press the mixture down so it has a flat surface.

      Let sit for 1 hour, then cut into squares and enjoy your ube rice krispie treats. 

      How to store the leftovers

      If you have any leftover ube rice krispies, transfer them to an airtight container, separating each layer with a piece of parchment paper. 

      You can leave them out on the counter at room temperature for 2-3 days. After this time period, they should be thrown away if not already consumed.
