      7 Recipes Using Zucchini

      Zucchini is a delicious and healthy option to add to a variety of dishes. It’s great for the summer time, but, good news! It can easily be found year round. You’ll be sure to love at least one of these delicious recipes using zucchini.

      This green summer squash can be used in a variety of ways, and is especially delicious when it is baked, fried, grilled or roasted. 

      But, you can also eat it raw (though I prefer the flavor when it is a little cooked). 

      It’s great for main dishes, side dishes, even desserts (yes, you heard that right). 

      Though it has a wonderful flavor, it can easily hide in some great comfort food dishes, which is wonderful for picky eaters.

      But, before I ramble on forever on how amazing zucchini is, let’s just into the recipes!

      1. Cheesy Zucchini Bake

      One of the easiest ways to prepare zucchini is to throw it into a bake, and let’s be honest, throw some cheese on it and there’s no way it can’t be good.

      Try out this super easy zucchini bake recipe, which includes just zucchini, yellow squash, cheeses and some spices. Simple and delicious!

      2. Zucchini Lasagna

      Zucchini lasagna will always be my favorite way to prepare lasagna. If you or someone you know is a picky eater, this recipe is perfect since the zucchini is barely detectable.

      This recipe includes layers of zucchini and regular oven ready lasagna noodles, so you are still able to get that noodly taste. But, if you prefer, you can easily remove the lasagna noodles and just use zucchini.

      Also, sautee the zucchini in a little olive oil, salt and pepper before adding them to the dish if you prefer a stronger charred zucchini taste!

      3. Zucchini Fritters

      Zucchini fritters are a very creative way to prepare zucchini. Super delicious and crispy, great for a side dish!

      You will be using grated zucchini, so you will need some type of cheese grater for this recipe. The only other ingredients you need are flour, eggs, scallions and olive oil for frying. Try out this delicious recipe!

      4. Stuffed Zucchini

      Stuffed zucchini is another creative way to prepare zucchini. Because of the richness of the zucchini boat fillings, the zucchini base is not super over powerful.

      This recipe is basically mini zucchini lasagnas. I know right, delicious! Simply fill the zucchini boats with meat sauce and cheese, pop in the oven and you have a delicious stuffed zucchini.

      You can also fill your zucchini with plenty of other fillings. I like to create a stuffed pepper kind of stuffed zucchini by filling in with marinara sauce, cooked rice, ground beef and cheese.

      5. Parmesan Zucchini Fries

      This zucchini recipe is super delicious and simple! It can also be a very appealing dish for picky eaters. 

      The ingredients are super simple, with just zucchini, spices and parmesan. It doesn’t take much time to prepare them, and then you simply just pop them in the oven!

      6. Zucchini Bread

      Now onto the desserts! Zucchini fits perfectly into a variety of desserts. It adds some great texture and moisture, making a great sweet treat.

      This recipe is a tad more labor intensive compared to the rest, but it is well worth it. Also, the recipe can easily be made vegan if the honey is replaced for maple syrup and the egg is replaced with a chia or flax egg.

      7. Chocolate Zucchini Cake

      Feeling a little chocolatey? That’s basically how I feel all the time if I’m honest. This chocolate zucchini cake is a wonderful idea if you are craving a chocolate dessert but also want a little veggie action.

      Along with this, you can get another little veggie boost from the frosting, since it is made with avocados! Who doesn’t love nutritious and delicious dessert?

      Zucchini is one of the most versitile vegetables out there (up there with the infamous cauliflower). It adds some wonderful moisture and flavor, without being too overpowering.

      But, not only is it delicious, it is full of nutrients that are great for your body, such as vitamin C and potassium.
